Ingredients

185 g butter, room temperature

100 g caster sugar

1 tsp vanilla extract

2 egg

1 egg yolk

285 g flour

1 tbsp baking powder

Step by step

  1. Add the butter, caster sugar and vanilla extract to the bowl of stand mixer fitted with the Paddle Attachment. Mix on speed 4 until incorporated, then add the eggs and egg yolk.

  2. Lower to speed 1 and add the salt, flour and baking powder. Mix until a soft dough forms. Let the dough rest in the fridge for an hour, this will allow the dough to firm up.

  3. Attach the Cookie Accessory to the stand mixer, select the round shape and feed the cookie dough through the feeding tube. Catch the dough on a lined baking tray. Cut each strip into a 15 cm log and form into a spritz shape.

  4. Bake the cookies 12-15 minutes in a 175°C preheated oven. The cookies will be a bit soft when you take them out but will firm up while cooling.
