4 carrots
12 radishes
4 mini cucumbers
1/4 white cabbage
2 avocados
8 cooked shrimps
100 g cooked rice noodles
12 rice paper wrappers
handful fresh mint
handful salad
Step by step
Peel the carrots and cut the tops off the radishes.
Insert the Adjustable Slicing Disc to the Food Processor Attachment and attach it to the stand mixer.
Put the stand mixer on speed 10 and slice the radishes and cucumber.
Insert the Reversible Shredding Disc and shred the cabbage and carrots on speed 4. Combine the carrots and cabbage in a large bowl.
Slice the avocado and get everything ready to start assembling the spring rolls.
Fill a large plate or bowl with lukewarm water. Dip a rice paper wrapper in the water for 2 seconds and lay it flat on a plate.
In a row across the center, place the avocado, shrimp, some rice noodles, cabbage and carrot, radishes, cucumber, salad and mint. Leave about 5 cm uncovered on each side of the rice paper.
Fold the uncovered sides inward and tightly roll the wrapper.
