Ingredients
100 g unsalted butter
110 g golden syrup
110 g light brown sugar
200 g rolled oats
Step by step
A RECIPE BY EDD KIMBER. Add the butter, golden syrup and light brown sugar to the Cookprocessor bowl fitted with the ‘StirAssist’ stirrer and close the lid. Set the temperature to 60C for 3 minutes on speed 3 press start.
Add the rolled oats and close the lid. Hold down the 'Quick Stir' button for 20 seconds. Scrape the flapjack mixture into an 8inch square cake pan that has been lightly greased and lined with parchment paper. Bake at 180C for 35 minutes.
Allow to cool fully before removing from the cake pan and cutting into pieces.
If you have left over flapjacks you can crumble them over ice cream.
When you add the oats you can add some chopped stem ginger to make ginger flavoured flapjacks.
You can replace 50g of the oats with desiccated coconut to make coconut flapjacks.
