Ingredients

85 ml milk, lukewarm

8 g dry instant yeast

225 g all-purpose flour

1 tsp salt

15 g vanilla sugar

100 g soft butter

100 g pearl sugar

75 g icing sugar

Step by step

  1. This recipe makes 10 waffles.

  2. Whisk the yeast in the milk and let it rest in a warm place for 10 minutes.

  3. Attach the Sifter + Scale to the stand mixer. Sift the flour, salt and vanilla sugar on speed 2 into the bowl.

  4. Add the egg and soft butter to the dry ingredients and mix with the Dough Hook on speed 2 until a soft and stretchy dough forms. Cover the bowl with a clean towel and let rest in a warm place for 30 minutes. The dough should grow about a fourth of its original size.

  5. Add the pearl sugar to the risen dough and mix briefly on speed 1 until the sugar is incorporated. Divide the dough into 10 equal parts and shape each piece into a ball. Dust in icing sugar.

  6. Place the waffles in a preheated and greased waffle iron and bake on medium high heat for about 4 minutes until golden brown and caramelized.
