Dumplings with Schrimp Ginger Cilantro filling

Ingredients

320 g all-purpose flour

175 ml hot water

8 g ginger, peeled

25 g green onions, white & green part

1 clove garlic, peeled

20 g cilantro

450 g peelend and deveined shrimp, thawed and drained if frozen

1 tsp soy sauce

1 tsp sesame oil

Step by step

  1. To make dumpling dough, add flour and hot water to KitchenAid Stand Mixer bowl with Dough Hook attached. Turn to speed 1 to incorporate ingredients, stopping to scrape if necessary. Continue to knead for total of 7-9 minutes until dough is smooth and elastic. Let dough rest for 30 minutes.

  2. While dough is resting, make dumpling filling. In Food Chopper, chop ginger, green onions, garlic, and cilantro. Scrape into mixing bowl. Finely chop shrimp with Food Chopper and then add to ginger mixture. Stir in soy sauce and sesame oil.

  3. When dough has finished resting, roll into log with 1-inch diameter. Portion off ½-inch pieces and roll into balls, flattening until ½ inch thick. Cover dough balls.

  4. Attach 3-in-1 Pasta Attachment to Stand Mixer and turn to speed 4. Roll flattened balls through roller starting on thickness setting 1, rotating after each pass to maintain circular shape.

  5. Roll wrappers to thickness 4. Flour each dumpling wrapper and stack and cover while continuing to roll the remaining dough.

  6. To make dumplings, take one wrapper and add a heaping teaspoon of shrimp filling to center. Moisten edges and fold dumpling together, pinching to seal. Place on floured rimmed baking sheet and continue with remaining dough and filling.

  7. To cook dumplings, heat 1 Tablespoon of canola oil over medium heat. Add dumplings to fit, flat side down, and cook for 2-3 minutes. Add 1 cup of water and cover to steam for 4-5 minutes. Uncover and allow remaining water to cook off and crisp bottoms of dumplings. Repeat with more canola oil and dumplings.

  8. Pro Tip: Dumpling wrappers are good for a variety of fillings. Try a combination of ground pork and cabbage in place of the shrimp. Serve with a simple dipping sauce made from soy sauce, chili oil, rice vinegar, garlic, and sesame seeds.
