Ingredients

155 g brown butter, cooled

130 g caster sugar

45 g dark brown sugar

1 tsp vanilla extract

180 g all-purpose flour

5 tbsp cocoa powder

1/2 tsp salt

1/2 tsp baking soda

30 g icing sugar

2 tsp milk

Step by step

  1. In the bowl of a stand mixer fitted with a Flat Edge Beater, add the caster sugar, dark brown sugar, brown butter, cocoa powder, flour, baking soda, vanilla extract and salt.

  2. Turn the Speed Control Lever to 4 and mix for 3 minutes until the ingredients are well combined.

  3. Wrap the dough tightly in cling film and let rest in the refrigerator for at least 30 minutes.

  4. Roll the dough out onto a floured surface and use a cookie cutter to cut out halloween shaped cookies.

  5. Transfer the cookies to a baking tray lined with parchment paper and bake for 15 minutes in a 170°C pre-heated oven.

  6. Transfer the cookies to a wire rack and cool completely before icing.

  7. In a separate bowl, combine the icing sugar and milk and mix thoroughly with a spoon. If your icing is too thick, add 1/2 teaspoon milk.

  8. Transfer the icing to a decoration pen or piping bag and ice the cookies.
