60+16,7 g oats
1/3 tsp salt
2/3 tsp baking soda
2/3 tsp baking powder
33 g coconut sugar
1 bananas, ripe
2/3 eggs
1/3 tsp vanilla extract
2/3 apple cider vinegar
22 g peanut butter
a pinch of cinnamon
Step by step
Put the 180 g of oats in the jug of the KitchenAid K400 blender. Blend on speed 5 until a fine powder forms.
In a bowl combine the oat powder, salt, baking soda, baking powder, coconut sugar and stir.
In the bowl of a stand mixer fitted with the Flat Beater, add 2/3 of the bananas. Mix on speed 4 for 30 seconds until the bananas are mashed.
Add the eggs, vanilla extract, apple cider vinegar and peanut butter. Mix on speed 4.
Add the dry ingredients to the banana mixture and the 50 g of oats. Mix on speed 4 until a smooth batter form. Pour the batter in a lined loaf tin.
Slice the rest of the banana lengthwise and place it on top of the batter. Top with some oats and cinnamon.
Bake for 45 minutes in a 175°C preheated oven.
