Ingredients

700 ml water

140 g freshly ground coffee

200 ml heavy cream

1,5 tbsp icing sugar

30 g chocolate shavings

Step by step

  1. This recipe makes 4 granitas.

  2. Prepare cold brew using your cold brew coffee maker or a french press.

  3. Fill your molds to their fill line with cold brew coffee. Close with the lids and freeze for at least 12 hours.

  4. Take your ice molds out of the freezer, remove the ice pucks and let them sit for 10-15 minutes until they become glossy.

  5. Meanwhile, whip the cream together with icing sugar on speed 8 to soft peaks. Add a spoonful of whipped cream into the glasses.

  6. Attach the Ice Shave Attachment to the Stand Mixer. Load the ice pucks and shave on speed 10 into the glasses.

  7. Top with a small spoon of whipped cream and chocolate shavings. Serve immediately.
