Ingredients

4 plain water and fresh berry pucks

440 g blackberries

180 ml water

130 g sugar

30 ml lemon juice

pinch salt

2 or (50 g) kiwis, sliced and quartered

Step by step

  1. 1 day before: Fill your molds with 40 g berries (about 10-12 berries). Then fill with water to the fill line and freeze for 12 to 24 hours.

  2. 1 day before: In a saucepan, combine 400 g berries, 180 ml water, 130 g sugar, lemon juice and pinch of salt. Bring to a boil, reduce heat to medium-low and simmer for 15 minutes. Puree in a covered blender making sure not to splash up hot liquid. Strain and cool completely.

  3. Day of: Peel and slice your kiwifruit. Add to a bowl and reserve for garnish.

  4. This recipe does require tempering. Make sure your coarse blade attachment is in place. Shave your ice with frozen berries into a cup or bowl. Top with syrup until ice is coated. Top your ice with kiwifruit for garnish.

  5. *The blackberries can be swapped for raspberries, strawberries or blueberries or all the above to create a mixed berry flavor.

  6. *You can use this syrup over plain water shave ice with a fine blade attachment but remember to thin it out a bit with cold water for the finer ice.

  7. *It is normal for this shave ice syrup to float on the surface of the ice without blending in but that is okay because the berry flavor is already in the ice.
