3 avocados
3 juice of fresh lime
3 zest of lime
1/4 tsp salt
60 g caster sugar
120 ml heavy cream
400 ml full-fat coconut milk
21 g coconut flakes
Step by step
Take the pits out of the avocados and add the fruit to the bowl of the stand mixer fitted with the Flat Beater.
Add the lime juice, lime zest, salt and sugar and mix on speed 4 until the mixture is smooth.
Replace the Flat Beater with the Wire Whip. Add the cream and coconut milk to the bowl and mix until the mixture is smooth and looks like soft whipped cream.
Attach the Ice Cream Bowl to the stand mixer and turn the Speed Control Lever to stir speed. Slowly pour in the ice cream base and churn for 15-20 minutes.
Serve immediately or transfer to a container and freeze for another 2 hours if you like your ice cream firmer.
