Ingredients
180 ml whipping cream
45 g all-purpose flour
70 g caster sugar
9 apricots
2 eggs
1 tsp vanilla extract
salt
Step by step
Cut the apricots in half and remove the pits.
Place the apricots on the bottom of an oven proof dish.
Place flour, sugar, vanilla extract, eggs, salt and cream in a bowl of a stand mixer.
Attach the Wire Whip. Turn the Speed Control Lever to 4 and mix for 45 seconds.
Pour the batter over the apricots.
Bake for 45 minutes in a 175C preheated oven.
