Ingredients
170 g cucumber, peeled and chopped
2 tbsp fresh lemon or lime juice
1 tbsp chopped fresh mint, plus 6 small sprigs for garnish
60 ml chilled simple syrup*, or to taste
125 ml good-quality light rum or water for an alcohol-free version
10 ice cubes
Step by step
Combine all ingredients in blender jar of the KitchenAid ARTISAN Power Plus Blender. Secure lid and turn dial to Speed 1. Slowly increase speed to high (Speed 10 or 11). Blend until completely smooth for about 30 seconds. Turn dial to Speed 2 and blend for 10 seconds or so to reduce froth.
Divide mixture among 6 tumbler glasses. Garnish with mint sprigs and serve at once.
