Ingredients

2 slices bread

250 g ricotta

1,5 tbsp olive oil

1/2 tsp salt

1/4 tsp pepper

2 heirloom tomatoes

1 lemon

Step by step

  1. Insert the bread into the toaster slots. Select your desired shade and press down the lever to start toasting. Once golden and crisp, let the toasts cool on a wire rack.

  2. In a small chopper or food processor, combine the ricotta, olive oil, salt, and pepper. Whip for 2 minutes, until smooth, light, and airy. Spread or pipe generously over the toasted bread.

  3. Slice the tomatoes and lay them gently on top of the ricotta. Finish with freshly grated lemon zest, basil leaves, and a drizzle of extra olive oil.
