Ingredients

100 g Parmesan cheese, finely grated

150 g all-purpose flour

1 tsp salt

100 g butter, room temperature

15 sprigs fresh thyme

1 tbsp water

Step by step

  1. This recipe makes 40 biscuits.

  2. Place the cheese, flour, salt and butter in the bowl of a stand mixer fitted with the Paddle Attachment.

  3. Remove the leaves from 10 sprigs of thyme and chop them finely. Add to the bowl with the rest together with the water. Mix on speed 2 until the dough just comes together. Wrap in cling film and chill for 1,5 hours.

  4. Roll out the dough in between 2 sheet of baking paper. Cut out rounds and transfer them to a lined baking sheet.

  5. Bake the cookies for 12 minutes on 175°C until golden brown. Let cool on a wire rack.
