Ingredients

30 g creamy natural peanut butter, well-stirred

125 g coconut milk, well-shaken

1-2 tbsp sugar

1 tsp fresh lime juice

1 tbsp thai red curry paste, or more to taste

2 tsp apple cider vinegar

sea salt

Step by step

  1. Combine all ingredients in blender jar of the KitchenAid ARTISAN Power Plus Blender. Secure lid and turn dial to Speed 1. Slowly turn dial to Speed 4 and blend until completely smooth for about 30 seconds.

  2. Use immediately,or transfer to airtight container and refrigerate for up to 1 week.

  3. Add teaspoon of sriracha for a spicier version.
