Ingredients
300 g plain flour
30 g cornflour
5 g dried yeast
baking powder
1 1/3 tbsp caster sugar
salt
165 ml water
1 1/3 tbsp vegetable oil
mixed seeds
Step by step
Place all the ingredients (minus the seeds) into the bowl of the Cook Processor fitted with the Dough Blade. Select DOUGH P1 and press start to activate.
After STEP 1 press start to continue.
After STEP 2 increase time for STEP 3 to 45 mins. Press start to continue.
Remove the risen dough from the Cook Processor and divide into 12 equal sized pieces of dough (if making the 6 person sized recipe), rolling into balls.
Place the buns onto squares of parchment paper and lightly cover with clingfilm, setting aside for 30 minutes or until puffy.
Fill the Cook Processor with about 500ml boiling water and place the Lower Steamer Basket and Lid on top of the Cook Processor Bowl. Select STEAM P1 increasing the time to 15 minutes. Spray the buns with a little oil and sprinkle with a few seeds. Place the 4 buns at a time into the steamer and press start to activate the programme. Repeat the programme as required until all the buns are cooked.
It is easier to make these buns in batches, so make the larger batch and freeze the buns you don’t need. Simply reheat in the steamer when required.
Split the buns in half and fill them with all manner of recipes including pork belly for a classic taiwanese Gua Bao.
You can also fill then buns before steaming, using a barbecue pork belly mixture to make Char Siu Bao.
