Sourdough scallion pancakes
Don't let your sourdough discard go to waste. Get creative with it and and whip up these crispy yet chewy sourdough scallion pancakes.

all-purpose flour

baking powder

chili flakes

Step by step
Combine the sourdough discard, flour, water, salt, baking powder, sesame oil, and chili flakes in the bowl of a Stand Mixer fitted with the Mixer Whisk. Chop the herbs and add them to the bowl. Mix on speed 2 until combined.
Heat a lightly greased pan over medium heat and cook the pancakes for about 1 minute on each side until golden brown.
