Ratatouille with chorizo
Delicious French vegetable stew spiced with chorizo!

Ingredients
2 garlic cloves
1 red onion
4 tbsp olive oil
1 eggplant
2 orange bell peppers
2 courgettes
2 tbsp tomato passata
2 tbsp fresh thyme
3 tbsp fresh rosemary
1 tsp salt
1/4 tsp pepper
Step by step
Peel the garlic cloves. Chop the garlic finely. Peel the onion and cut in half.
Fit the Food Processor with a Dicing Disk and turn the speed to 1. Add the red onion through the feed tube to dice. Heat 3 tablespoons of olive oil in Dutch oven. Add garlic and onion and cook, stirring constantly, until soft.
Deseed and cut the orange bell peppers into 4 pieces. Cut courgettes lenghtwise. Cut eggplants lenghtwise in quarters. Fit the Food Processor with a Dicing Disk and turn the speed to 1. Add the onion through the feed tube to dice. Add to the Dutch oven.
Add tomato passata, fresh thyme, rosemary, salt and pepper. Mix and let cook, covered, over medium heat for 30 minutes.
Heat 1 tablespoon of olive oil in a pan. Slice choriozo and add to the pan. Pan-fry the slices on medium heat. Add the chorizo and the oil to the Dutch oven with the ratatouille. Serve hot with French bread.
