Ingredients

200 g precooked tapioca pearls

1,5 L water (for syrup and tea)

300 g muscovado sugar or brown sugar

4 bags black assam tea

75 ml condensed milk

75 ml heavy cream

Step by step

  1. To make the boba, bring a pot of water to a boil. Pour in the tapioca pearls and stir. Lower the heat to a rolling simmer, cover and let cook for 2 minutes. Stir constantly.

  2. Meanwhile, make the sugar syrup by adding the muscovado or brown sugar and 500ml water to a small saucepan. Bring to a simmer over low heat and whisk constantly for 10 minutes until slightly thickened. Transfer to a large heatproof bowl.

  3. Drain and rinse immediately with cold water. Transfer the cooked boba to the syrup and let soak for at least 10 minutes up to 3 hours.

  4. Bring the remaining water to a boil in the KitchenAid Kettle, pour into a teapot and add the black leaf tea. Let steep until the tea has cooled down.

  5. Stir together the milk and cream and set aside.

  6. Dive the boba over the glasses, add a little syrup if you like a sweet tea, top with ice, pour over the black tea and top off with the milk mixture. Serve immediately with a wide opening straw.
