Ingredients

3 garlic cloves, peeled

3-4 spring onions, sliced

1 tsp curry powder

1/2 apple

1 banana

1 big mango

600 ml vegetable broth

400 ml coconut milk

to taste salt

Step by step

  1. Place the broth and milk in the blender.

  2. Add the fruit and vegetables, curry powder and a pinch of salt.

  3. Secure lid and set blender to the Soup setting, which will blend and heat the soup.

  4. Blend until machine turns itself off.

  5. Alternatively, combine ingredients in blender as directed, secure lid and turn dial to Speed 1.

  6. Slowly increase speed to high (Speed 9 or 11).

  7. Blend until completely smooth and rising steam is visible for about 4-5 minutes.
