Ingredients

350 g cauliflower, steamed

100 g cashews, soaked

250-300 ml vegetable broth

to taste salt

Step by step

  1. Place the broth in the blender.

  2. Add the vegetables and nuts.

  3. Secure lid and set blender to the Soup setting, which will blend and heat the soup.

  4. Blend until machine turns itself off.

  5. Alternatively, combine ingredients in blender as directed, secure lid and turn dial to Speed 1.

  6. Slowly increase speed to high (Speed 9 or 11).

  7. Blend until completely smooth and rising steam is visible for about 4-5 minutes.
