Ingredients

1/2 red beet root

40 g tahini

30 ml lemon juice

30 g ricotta

150 g chickpeas, rinsed and drained

1/2 clove garlic

salt

pepper

Step by step

  1. With a knife, poke some holes in the beet.

  2. Wrap it up in tin foil and bake it for 60 minutes in a 220°C preheated oven until a knife slices through easily.

  3. Let cool off, then peel off the skin.

  4. Add the tahini, lemon juice, ricotta, chickpeas, garlic, beet and salt and pepper to the jug of the KitchenAid K400 blender.

  5. Mix on speed 5 until the hummus is completely smooth.
