This nutritious version of the classic alfredo sauce doesn't need butter and cheese but is just as tasty.

400 g cauliflower
2 onions
4 g garlic cloves
2 tbsp olive oil
100 ml vegetable stock
100 ml vegan culinary cream
2 tsp salt
2 tsp pepper
1 tsp nutmeg
4 tbsp nutritional yeast
2 tbsp fresh parsley, chopped
Step by step
Cut the cauliflower into small florets and steam for 15 minutes until fork tender.
Peel and dice the onions and garlic cloves. Heat the olive oil and saute until fragrant. Set aside.
Add the cauliflower, sauteed aromatics, vegetable stock, vegan culinary cream, spices and nutritional yeast to the jug of the Food Processor. Mix on speed 2 until smooth.
Transfer the sauce to a deep pan with cooked pasta and toss to reheat the sauce. Sprinkle with parsley and serve.
