Ingredients

250 ml whole milk

10 pods green cardamom

2 tsp instant dry yeast

75 g sugar

1/4 tsp salt

200 g butter

500 g white bread flour

100 g dark brown sugar

1,5 tsp ground cardamom

1/2 tsp cinnamon

1 egg, beaten

3 tbsp pearl sugar

Step by step

  1. In a small saucepan, heat 250 ml of milk over medium heat. Crush 6 green cardamom pods and add them to the milk. Once the milk is warm (but not boiling), turn off the heat and cover the pan. Let it steep for 15 minutes to infuse the cardamom flavor. Afterward, strain out the cardamom pods and allow the milk to cool to lukewarm (about 37-40°C). Melt 100 g of butter and let it cool slightly.

  2. Fit the KitchenAid mixer with the Dough Hook. Add the lukewarm infused milk, sugar, instant yeast, flour, melted butter, and salt. Mix on speed 1 until the dough just comes together. Increase to speed 2 and knead for 5 minutes, until the dough is smooth and elastic. Cover the bowl with a damp towel or plastic wrap and let the dough rise for about 1 hour and 30 minutes, or until it has doubled in size.

  3. Fit the KitchenAid mixer with the Paddle Attachment. Place the remaining butter - make sure it's softened - in the small KitchenAid bowl. Add the ground cardamom, cinnamon, and dark brown sugar. Mix on speed 4 until fully combined and smooth. Set aside.

  4. Lightly flour a clean work surface. Once the dough has risen, turn it out onto the surface and divide it into two equal pieces. Roll out the first piece into a 20x40 cm rectangle. Spread the cardamom filling evenly over the dough. Fold the dough in half lengthwise, then cut it into six equal pieces, each about 7 cm wide. Repeat with the second piece of dough.

  5. Take one of the cut pieces and, leaving about 2 cm uncut at the top, slice it into three equal strips. Braid the three strips gently, then turn it around. Wrap the braid around itself into a coil, tucking the end underneath to secure it. This technique gives you beautifully braided, visually striking cardamom buns.

  6. Place buns on a parchment-lined baking sheet, cover with a fresh kitchen towel. Brush the buns with egg wash and sprinkle with pearl sugar. Bake for 15–17 minutes, or until golden brown, and let them rise for 30 minutes.
