Tools
Ingredients
120 ml warm milk
3 tbsp caster sugar
6 g instant yeast
300 g all-purpose flour
1 egg
6 g salt
120 g butter, soft
Step by step
Mix the warm milk, half of the sugar and yeast in a small bowl. Let is stand for 5 minutes.
Tip the flour, egg, remaining sugar, salt and the milk mixture into a mixing bowl of the stand mixer.
Attach the Dough Hook onto the stand mixer. Turn the Speed Control Lever to 2 and mix until the dough starts coming together. Increase the speed to 4 and mix until dough ball forms.
Put the speed back to 2 and gradually add soft butter. Keep mixing until all the butter is incorporated. Mix for another 2 minutes. The dough will remain sticky at this stage.
Cover the bowl with a damp towel and let the dough rise in a warm place for 45 minutes.
Cover your hands with some oil and tip the dough out onto a floured work surface. Divide the dough into 3 parts and shape each piece into a ‘rope’.
Braid the three pieces of dough together. Cover again with a damp towel and let it rise in a warm place for another 45 minutes.
Alternatively brush the brioche with an egg wash.
