What can you make with your new pasta cutters and roller?

With your trusty pasta attachment set, delicious fresh pasta is always on the menu. There's a roller to make even sheets and cutters to create favourites like fettuccine and spaghetti. Here’s all you need to get started…

Lasagne

Neat, evenly-rolled pasta is ideal for lasagne or to prepare for cutting. You can roll 14 cm (width) sheets to 8 different thickness settings.

Fettuccini

Cut your pasta sheets into beautiful egg noodles or fettuccine strands of 6.5 mm wide and mix with shrimp, or perhaps a creamy herb sauce.

Spaghetti

Cut your pasta sheets into spaghetti, thin fettuccine or linguine fini strands of 2 mm wide and toss with olive oil and basil, or perhaps a rich bolognaise.

How to plug in your attachment

Remove the hub knob

Turn the mixer OFF (0) and remove the bowl. On a tilt-head mixer, unscrew the hub cover to remove it. On a bowl-lift mixer, flip up the hub cover to open it.

Insert your attachment

Insert the attachment into the hub, making sure the power shaft fits into the square socket. You may have to rotate it back and forth slightly. The pin fits into the notch when in the proper position.

Tighten the hub knob

Tighten up the attachment hub knob until the mixer is completely secured to the mixer. It’s now ready to start!

How to use the pasta roller: thickness chart

Your pasta roller has 8 different thickness settings, so you can get the exact result you’re looking for. Sprinkle a little flour on each piece to prevent sticking, and keep feeding it through, starting with setting no. 1 and gradually increasing to the desired thickness. Note: designed to be used with pasta dough only.

Setting 1 or 2

For kneading and starting to thin out the pasta dough.

Setting 3

Thick “kluski” (Polish-style) noodles which have double the amount of egg.

Setting 4

Use this middle setting for rolling out dough for egg noodles.

Setting 4 or 5

A good thickness for lasagne sheets, fettuccini, spaghetti and also ravioli.

Setting 6 or 7

Thin settings for tortellini, thin fettuccine and linguine fini (‘small linguine’).

Setting 7 or 8

Delicate thickness for thin ‘angel hair’ type pasta/capellini or very thin linguini.

What speed do I need for my pasta?

For the perfect pasta, follow the speed selection guide below. Simply push the stand mixer’s speed adjustment knob along to the right speed for that attachment.

Speed 2 for pasta roller

How to clean your pasta cutters and roller

You’ll want to keep your stainless steel pasta attachment set working perfectly. Take a look at the best way to keep the parts clean.

Remove any bits of dough

After rolling or cutting pasta, let the attachment air dry for an hour, and then remove any dried dough using the included cleaning brush. If dough is hard to remove, try tapping the attachment with your hand. Use a toothpick if necessary.

Wipe over the attachment

Once all the dried dough has been removed, polish the pasta roller and cutters with a soft, dry cloth and store them in a dry place like a cupboard at room temperature. Do not immerse in water or wash in the dishwasher.

Note

Never use a knife or any other sharp object to remove excess dough. Do not run a dish towel or any other cloth through the rollers to clean them.
