Sweet potato mash
A buttery and sweeter version of classic mashed potatoes.

sweet potatoes
425 g
pecans
80 g
butter
100 ml
milk
4 tbsp
maple syrup
1 tsp
pepper
1 tsp
salt
1 tsp
nutmeg
Step by step
Peel the potatoes and boil until very tender. While potatoes are boiling, toast the pecan and coarsely chop. Brown the butter until fragrant.
Transfer the boiled potatoes to a mixing bowl and add milk, maple syrup, pepper, salt en nutmeg.
Mix on speed 2 until the potatoes are completely broken up, then add 3/4 of the browned butter and the pecans.
Mix on speed 2 until the butter and pecans are incorporated.
Transfer to a serving bowl and finish off with the remaining browned butter and some chopped pecans.
