plain flour

150 ml

milk

eggs (separated)

20 g

butter (melted)

1/2 tsp

salt

oil for baking

Step by step

  1. Place the flour, salt, egg yolks, milk and melted butter in the bowl of the stand mixer. Attach the Flat Beater and mix on speed 4 for 30 seconds until the batter is smooth.

  2. Pour the egg whites into a separate stand mixer bowl. Attach the Wire Whip and whisk the egg whites to stiff peaks on speed 10.

  3. Add the egg whites to the batter and mix in the mixer fitted with Flat Beater on speed 1 for 30 seconds.

  4. Lightly oil a skillet, then pour small amounts of the batter, spacing them well apart. Bake over medium heat for 3 minutes on each side. Repeat until you have used all the batter.

  5. Tip: serve with sour cream, smoked salmon and chopped chives.
