Ingredients
Step 1
Throw the broth, peas, green onion, salt, pepper, and avocado into the blender jar of the KitchenAid® Power Plus® Blender.
Step 2
Secure the lid, and set the blender to the Adapti-Blend™ Soup program.
Step 3
Blend until the machine turns itself off. Alternatively, blend for about 5 minutes, starting on speed 1 and gradually increasing to speed 10.
Step 4
Add the mint leaves and lemon juice, and blast on high for 10 to 20 seconds until smooth and creamy.
Step 5
Tweak salt, pepper, and lemon juice to taste.
Step 6
Soup will come out of the Blender hot.
Step 7
Serve with a swirl of dairy-free sour cream, plain yogurt, and garnish with mint leaves.

I’ve given a measurement for the green onion as a guide for size as green onions vary so greatly. One medium green onion yields about ¼ cup chopped. You can just chop off the bulk of the white part of the onion and throw it in whole.)
