  • 4cooked red beets
  • 2/3cucumber, chopped in 2cm cubes
  • 1/2red onion, chopped
  • 1garlic clove, quartered
  • 200mlvegetable stock
  • 1 tbspred wine vinegar
  • 1 tbspolive oil

    Refrigerate for 1 hour

    Serve with some goat's cheese mousse (whip some cream and add warm melted fresh goat's cheese. Stir until combined and refrigerate until firm.), diced cucumbers and beet (or other) sprouts.
