  • 62 mlegg whites
  • 110 gcaster sugar
  • 1/4 teaspoonwhite vinegar
  • 1/2 tablespooncornflour
  • 125 mlegg whites
  • 220 gcaster sugar
  • 1/2 teaspoonwhite vinegar
  • 1 tablespooncornflour
  • 187 mlegg whites
  • 330 gcaster sugar
  • 3/4 teaspoonwhite vinegar
  • 1,5 tablespooncornflour

  • Step 1

    Attach the Wire Whip to the stand mixer.

  • Step 2

    Put the egg whites into the bowl of the mixer. Pull the Speed Control Lever to 8 and whisk until they form stiff peaks.

  • Step 3

    Add the sugar a tablespoon at a time.

  • Step 4

    Whisk until the meringue looks glossy.

  • Step 5

    Add white wine vinegar and cornflour and gently mix it in.

  • Step 6

    With a big spoon, create a pavlova shape on a baking paper lined baking tray.

  • Step 7

    Bake for 2 hours in a 100°C oven. When baked, let completely cool in the oven.

  • TIP

    Serve with whipped cream and fresh fruit.
