egg whites

220 g

caster sugar

1/2 tbsp

white vinegar

1 tbsp

cornflour

Step by step

  1. Attach the Wire Whip to the stand mixer.

  2. Put the egg whites into the bowl of the mixer. Pull the Speed Control Lever to 8 and whisk until they form stiff peaks.

  3. Add the sugar a tablespoon at a time.

  4. Whisk until the meringue looks glossy.

  5. Add white wine vinegar and cornflour and gently mix it in.

  6. With a big spoon, create a pavlova shape on a baking paper lined baking tray.

  7. Bake for 2 hours in a 100°C oven. When baked, let completely cool in the oven.

  8. Serve with whipped cream and fresh fruit.
