  • 1 tablespooncaster sugar
  • 133 mlsweetened condensed milk
  • 1.5egg yolks
  • 83 mlfresh lime juice

  • 266 mlsweetened condensed milk
  • 3egg yolks
  • 166 mlfresh lime juice
  • 190 gdigestive biscuits
  • 6 tablespoonsbutter, melted and cooled
  • 3 tablespoonscaster sugar
  • 400 mlsweetened condensed milk
  • 4.5egg yolks
  • 330 mlfresh lime juice

  • Step 1

    Break the biscuits into large chucks and add them to the Food Processor.

  • Step 2

    Add the sugar and the melted butter.

  • Step 3

    Mix on speed 1 until all the ingredients are combined.

  • Step 4

    Spread the mixture in a baking tin and press firmly down with the back of a spoon or a glass.

  • Step 5

    Bake for 10 minutes in a 190ºC oven until golden brown. Let cool in the oven.

  • Step 6

    In a bowl, gently mix together the condensed milk, egg yolks and lime juice.

  • Step 7

    Pour into the cooled crust and even out the surface with a spatula.

  • Step 8

    Bake for 15 minutes in a 160ºC oven until the custard is firm. Let completely cool before serving.

  • Step 9

    Finish off the pie with a lime zest.
