  • 115 gall-purpose flour
  • 20 gcaster sugar
  • 1/3 teaspoonsalt
  • 3 ginstant dry yeast
  • 40 mlwater
  • 20 mlmilk
  • 10 g + 35 gbutter
  • 1/3egg
  • 1 tablespooncinnamon
  • 40 glight brown sugar
  • 230 gall-purpose flour
  • 40 gcaster sugar
  • 2/3 teaspoonsalt
  • 6 ginstant dry yeast
  • 80 mlwater
  • 40 mlmilk
  • 20 g + 70 gbutter
  • 2/3egg
  • 2 tablespoonscinnamon
  • 80 glight brown sugar
  • 345 gall-purpose flour
  • 60 gcaster sugar
  • 1 teaspoonsalt
  • 9 ginstant dry yeast
  • 120 mlwater
  • 60 mlmilk
  • 30 g + 105 gbutter
  • 1egg
  • 3 tablespoonscinnamon
  • 120 glight brown sugar

  • Step 1

    Attach the Sifter + Scale attachment to the stand mixer. Sift the flour into the bowl.

  • Step 2

    Add the caster sugar, salt and yeast to the bowl.

  • Step 3

    Put the water, milk and smallest amount of butter in the microwave until the butter has melted.

  • Step 4

    Attach the Dough Hook to the stand mixer.

  • Step 5

    Pour the milk mixture in the flour mixture and turn the Speed Control Lever to 4. Mix for 4 minutes.

  • Step 6

    Bring speed up to 6 and mixer another 3 minutes.

  • Step 7

    Add the egg and mix 1 extra minute.

  • Step 8

    Pour the dough over a floured surface and knead one minute by hand. Let rest in a warm place for 10 minutes.

  • Step 9

    Attach the Flex Edge Beater to the stand mixer and mix the remaining butter, light brown sugar and cinnamon on speed 4 until smooth.

  • Step 10

    Roll out the dough into a rectangle, trim edges if necessary. Spread the sugar mixture over the entire dough.

  • Step 11

    Roll up the dough and cut into wide slices. Place into a greased baking tin. Let rise for one hour.

  • Step 12

    Bake for 25 minutes in 170°C preheated oven.
