Caramelized apple pie

a beloved cake enriched in flavour


  • 150 g all - purpose wheat flour
  • 70 g wholegrain flour
  • 150 g butter
  • 80 g caster sugar
  • 2 egg yolks
  • 500 g green apples
  • 30 g ginger, grated
  • 1 orange, peeled
  • 1 tablespoon cane sugar

Combine the two types of flour, butter, sugar and egg yolks in the stand mixer bowl. Knead for 1 minute, then remove and store in the fridge.

Peel the apples, remove the core and cut into slices.

Sprinkle the bottom of a frying pan with the sugar and place it to the induction hob at power level 8.

Cook the sugar until brown, then add the sliced apples.

Sprinkle with the grated ginger, the grated orange peels and reduce the power to 5 to cook the apples for 3-4 minutes.

Remove from fire and set aside to cool.

Flatten the cooled dough and use it to line a cake pan greased and sprinkled with flour.

Fill the pan with the caramelized apples, sprinkle with the cane sugar and bake at 180°C for 45 minutes.
