These butternut fritters make for a comforting lunch or dinner.

butternut squash

7,5 g

all purpose flour

1/2 clove

garlic, minced

1/2

egg

1/2 tsp

dried thyme

1/2 tsp

nutmeg

1/2 tsp

salt

1/2 tsp

black pepper

1 tbsp

olive oil

Step by step

  1. Peel the butternut squash.

  2. Attach the Food Processor Attachment fitted with the Reversible Shedding Disc to the stand mixer. Shred the butternut squash into bowl on speed 4.

  3. Add the flour, salt, nutmeg, pepper, dried thyme, egg and minced garlic to the bowl.

  4. Attach the Flat Beater to the stand mixer and mix all ingredients on stir speed.

  5. Heat the olive oil in a large skillet over medium high heat.

  6. Scoop a tablespoon of batter for each fritter in a serving ring, flattening them with a spatula.

  7. Cook until the bottom is golden brown. Flip and cook on the other side.

  8. Serve immediately.
