large egg yolks

250 ml

olive oil

2 tbsp

minced garlic

lemon

a pinch

salt

a pinch

pepper

Step by step

  1. Place the egg yolks and juice from one lemon in the jug of a food processor.

  2. Add pepper and salt.

  3. Start mixing on speed 2.

  4. Slowly pour in the olive oil in a very thin, steady stream until a creamy sauce begins to form.

  5. Mix until the texture resembles creamy and smooth mayonnaise.

  6. Add minced garlic and mix for another 10 seconds.

  7. Delicious with fried squid rings.
