This is one of KitchenAid's most innovative functions, enabling you to professionally dry fruit you have personally selected.
PREPARATION :
Wash and dry the fruit to be dried.
Cut the orange into thin slices, as regular as possible, about half a centimetre thick, to ensure even drying.
Place the slices on the KitchenAid drying rack or on another wire rack ensuring that the wire mesh is small enough to prevent food from falling through to the bottom of the oven during drying. Do not overlap the orange slices when placing them on the rack.
Place up to four racks on the oven at the same time. (if you have a smaller number of racks, place these in the middle oven positions)
Select the drying function required (from the special functions settings and press OK) Always keep the oven door half open. To begin with you will see a large volume reduction, which shows that drying is taking place successfully. This volume reduction will slow down and then stop when the drying is complete.
Let the dried oranges cool.
Using the KitchenAid Induction Hob, place 50g plain chocolate in a saucepan, set the hob to warming option and leave for 2 minutes. Gently stir the chocolate occasionally, until melted.
Chop the orange discs in half. Take each segment and dip half into the chocolate.
Either leave to cool, or place into the KitchenAid shock freezer on the freeze function for 5 minutes.
Serve.
